Whether you're using a cast iron pan on induction or a cast iron roaster in the oven, it's best to follow a few tips so that this super material can show off its best cooking abilities. Give cast iron time to heat up slowly before adding the food. Simply turn off the heat earlier - the material gives off enough heat. When frying, use particularly heat-resistant oil with a high smoke point. Avoid a cold shock caused by pouring cold water into hot cast iron. Note that acidic foods react with classic cast iron.
